Tried something new last night.

Pumpkin Chili!

replace beans with 1" cubes of uncooked pumpkin.

Make chili as usual but start frying the pumpkin cubes with the onions (this is my first step when I make chili).

it may take a little longer to simmer so that the pumpkin gets cooked through.

Pretty tasty as long as you like fleshy gourds.
