David, that is very impressive looking. Don't have to worry about staining from wood, meat, or veggies now!
 
Once you strip the finish, I guess this decarb layer remains, it is not removed with the stripper? What is it, is it another application of undercoat finish in itself that can be blued or just a "roughing" treatment on the steel itself like glass beading?

The decarb is the surface layer of the steel itself wherein the metal has lost some of it's carbon content during the heat treat process. This layer will have different properties than the bulk of the knife.
