Blueing a carbon blade

For home application I find that browning solution is easier to use than bluing. I used it initally in building muzzleloading rifles from parts and it is easy to get a nice even brown finish that is reasonably durable. Cold bluing solutions often result in a blotchy finish.

You can get it from muzzleloading supply places. I wouldn't recommend the Birchwood Casey Plum Brown option - it is good stuff but you need to heat the metal to get it to work well. There are cold application products that work just as well but are easier to apply.

As others have said, degreasing is essential. Humidity also helps a lot - it won't work that well in very dry air.

As for food safe - no idea. I mainly use it on hawks/axes and machetes so have never really had to worry about it. I'm not about to lick my muzzleloading barrels to report back.
