I have handled both the 720 and 721. I find the G10 handles of the 721 a bit lighter and dont get as beat up as the 720 (aluminium handle). I still have the 721 and carry it occasionally. A very well made knife, easy to carry and a joy to use. My favourite of the Benchmade line. One of the local knife guys has got a huge collection of Benchmade stuff and I've gotten to handle most of them, but I still like the BM721 best. Havent tried the 550/551 Griptillians though which look and sound like another good folder.
The 720/721/722's are, to me a wonderful mid sized Benchmade. I own the 720SBT, and have a 722 on the way to me. The AXIS lock is fabulous, and the steel used is very good. They fit a wonderful niche in the lineup that is just below the full sized folder line. Here is a site that has extremely good pictures and great descriptions of many BM's, including these:

I have a 721 Ive been using for the last couple of years for hiking/camping. Its a great knife, very solid, holds a great edge (154cm). Ive only had to strop the blade a few times to maintain the edge.
I just received my 722BT today! I sure like this knife, it's a real workhorse. The size puts in a wonderful position for everyday cutting multiple tasks, and the plain edge tanto blade will do well for this I think.
