2. Sure you can do that. Or do the opposite: go with 30 degrees until it's sharp. Then a few swipes at 40 degrees to remove any burr, and to hone, and make a little micro bevel to strengthen the final edge.
Most, if not all Benchmades that I've handled are sharpened from the factory around 40º. I've found 154CM a slight challenge to sharpen as you need to be careful to remove the burr or else you'll find "it dulls too quickly."
