Of the Bokers that have given me a hard time sharpening it's the carbon steels that are it. Oh, we eventually get things worked out, but for some reason they seem harder for me than other knives.
So far though I have been pleased with all my Bokers for the money I've paid for them. I have some in stag and carbon steel that I really like the look of, but they are a bit to heavy and bulky to carry much. The Delrin handled, carbon steel, German made, canoe I have is a delight to carry and came with good edges as it was. This one shaped up on the stones quickly. The bolsters and the blades patined quickly with regular carry and use.
I have a couple of the Arbolito (Aregentine made) stag fixed blades. They seem to be great knives with good sheaths for the price. Nice and sharp. I haven't used them hard enough to say more than that, but I do like them.
I have one Magnum (Chinese made I think) canoe with red bone scales and stainless blades. Honestly? It's a well made knife that comes well sharpened and has good fit and finish. The first time I got it wet while cleaning it up after skinning some fruit the handles bleed. I went ahead and wet the handles some more and got the bleed over with. After that the handles were still the same color as they were before and the excess dye was washed out. It carried well too. Not bad at all for $10 plus shipping off of the bay. I got it from the same person I've gotten most of my Boker slippies from.
I did get one small Congress in stag and carbon that had terribly weak springs. I found out all that particular model were a bit weak. Since it was the fault of Boker and not the seller I took it up with Boker. Actually, I grouched about it in the Boker forum and the Boker rep who was there at the time, Terry (he's left Boker for other pastures) asked me to call him.
Call and email I did, to BokerUSA in Colorado. What I got was great customer service. He said since it was one of their Off the Wall runs he would have to send it to Germany to be redone. Or, I could pick a different, but similar knife and he would replace mine with it. I sent mine back, telling Terry that what I really wanted was a Stag Congress with carbon blades, but would take stainless if that was all he had around, or I would be satisfied with a couple of other patterns. If possible, could he make it a slightly larger knife, but mostly one that had good back springs. I got this one back, even though I know it was probably a more expensive knife.
YMMV.
