Small can get the job done. I had tried to put a convex edge on my Toucan without much success. Didn't get it as sharp as I would have liked, so today, I got out the Lansky and put a 20dps beveled edge on it and after stropping it was hair popping sharp. We decided to put some beef ribs in the oven tonight for dinner and I usually separate the ribs so they cook more completely. Instead of using one of my Wustoff kitchen knives I opted for the one inch Toucan.
We all have heard how a small blade can be effective, well the little blade made short work of the heavy duty shrink wrapping the ribs were in. Then on to separating the individual ribs. No problem at all, just took a few swipes to get through the meat between the ribs and used the little blade to trim off some of the heavy fat that was left on them.
I bought this knife as a tote around neck knife to open packages and such and as a easy access knife in compliment to my larger pocket blade.
I really like this little scalpel.
