Boning Knife Recommendations?

Yeah the F. Dick knives have kicked most of my Vics out of the kitchen. :D
 
A2 would be a nice steel to have a good boning knife in, but rising wolf is pretty far from a classic boning knife design. It should have a thin ~6 inch blade.

You are right, The reason I went with the rising wolf was a dual work and play blade. Since the point doesn't drop its still has the fillet/boning knife characteristics of the blade. Also I use it more as a fillet knife at work cleaning tenderloins and filleting meat. How ever it is still a nice little blade in the bush. I have yet to field dress any large game with the blade but I have all the confidence in the world that it could.
 
Just boned out most of a deer with a pair of 3" hunting knives, O1 and A2. Never reached for anything else until making cuts in the kitchen.
 
I've got two Victorinox jobs that work fine. One has the Fibrox handle and is my preferred one. The other is wood that I shaped a bit. Mah woman has that one. I'd happily use a Swibo too. They're Wenger. A friend used to sell them so I've played with a few.
 
Dexter-Russell has a collection of good boners .Stiff [I prefer] or flexible.,I like A 5" for deer .Watch out for handles .A boner is held a number of different ways so simple is the word .No curves , no finger grooves.

Nothing like a...erm...stiff...uh...boner, eh? :o :D Dexter-Russell is good stuff though. Have you tried the F. Dick ErgoGrip series? I personally find them to have the most well thought out ergonomics of any handle I've ever used. Comfortable in pretty much every grip you could imagine.
 
As an update, I picked up an F. Dick six inch semi-flex. I was lucky enough to have a need to use it this winter -- processed a white tail with it. It did well, but for a deer, I think I'd rather have the 5''. For an elk or a bigger animal, I'm guessing the 6'' would be preferable.

The F. Dick will probably take the backseat to what I think is a very high quality japanese boning knife that I happened to stumble upon. Specifically, it was this Tsubaya VG-10 boning knife: http://www.amazon.com/Tsubaya-VG10-Boning-Knife-Honesuki/dp/B007IH3COO
I'm not sure what the deal was but I got it for $15. I have not seen it anywhere before or since for less than $150.

Unfortunately, I didn't get it until after I processed the deer, but I used it to cut up some of the top round meat into steaks a few days ago and it cuts like a laser through butter. Definitely the sharpest knife I own, and that is out of the box.
 
you could get a good custom made boning knife,,i am having two made one by big chris,an one by cody at C3 knives,both are 3v steel,also waiting for barkriver to come out with there canadian sportsman in 154cm..my f.dick knives i convexed the edge,they hold a longer edge in my opinion,just got to change the way i use my sharpening steel,reverse strokes..

I love the 5" ErgoGrip. You'll probably find that you can thin the edge angle a bit to overclock your performance. :)
 
I don't think I'd want a boning knife in 3V. Way too tough to deal with for that sort of task.

i was thinking the same thing at the time,but just decided to try it,,i think i made the right decision.when i am in the jungle hunting.i don't pack my sharpening steel anymore,i can go through 3 pigs before hitting it on the steel,i have tested it.an that's field dressing,skinning,deboning.
