Hello, I hope everyone is doing well this fine evening! For your consideration I have three boning knives up for sale. These blades are all based on a model I prototyped about a year ago as a gift for my dad, it ended up being by far his most used knife out of all the knives he has, so I decided to make some that are available for sale!
The blades are all made out of 1/16" 15n20. I love 15n20 for this application for a few reasons:
1) It is quite tough and so I can keep the profile of the knife very thin. This allows for a nice, stiff flex in the blade and excellent slicing properties, essentially no drag when cutting through food.
2) It is very easy to sharpen and maintain.
3) It stains very little when used with meat and cared for properly.
The bevel on these knives is full flat, taken to a 120 grit machine finish. They have a ~4.75" blade length and will fit M to XXL hands very well. These will work terrifically on all kinds of butchering tasks that require you to break down meat and fish, and can even be used for fruits and veggies in a pinch. Each one will come fully sharpened and ready to do work in the kitchen! Now for some video and pricing:
