Hi all,
I've got a couple of great kitchen blades up for sale here today. The steel is Sheffcut which is newly available It is essentially 26C3 with a bit of Niobium added. It is felt to add to carbide formation which can increase wear resistance. I didn't get much hamon action on these but they hardened perfectly. I'm running them at RC63 which should give you some decent edge retention. The handles are beautiful K&G stabilized curly Tasmanian Blackwood with figured Malaysian Blackwood bolsters, black and white G10 liners and black pins.
GYUTO SPECS:
OAL: 13.25" (335mm)
BLADE: 8.5" (210mm) long, 2.0" (50mm) heel height. It has been hand finished to 600grit and then etched in FeCl. The grind is hybrid full flat/convex which is down to 0.008" before sharpening.
STEEL: 0.098" (2.5mm) Sheffcut carbon steel heat treated to RC63.
HANDLE: K&G Stabilized curly Tasmanian Blackwood with Malaysian Blackwood bolsters, black and white G10 liners and black micarta pins.

NAKIRI MOD SPECS:
OAL: 11.75" (295mm)
BLADE: 6.75" (170mm) long, 2.0" (50mm) heel height. It has been hand finished to 600grit and then etched in FeCl. The grind is hybrid full flat/convex which is down to 0.008" before sharpening.
