1.) Joe Calton 7 1/2" Santoku in 1095 and Tulipwood

I've owned this for knife for 9 months and adore it, but am forced to make some room in the kitchen drawer. It has seen moderate usage exclusively for veg prep in my home kitchen. It's probably been touched up on the stones less than a dozen times. Overall in excellent condition.

Blade is heavily patina'd, reactivity has never been an issue. It's been kept dried and oiled after use, no rust or pitting. There's a couple faint scrapes and scratches from use. Etched "Calton" on one side "1095" on the other.

Quite light for it's size, very ergonomic, no hotspots or rough edges. Fatigue is definitely not an issue. Beautiful tulipwood scales with a pinkish tint to them, no cracks, gaps, dents, etc. They've swollen up just a bit over time, not noticeable at all in hand. They've been treated with light coats of mineral oil every now and then.

This knife is an absolute laser slicer and performs fantastically. It came with a near zero edge that I've thickened up just a tad over time for durability, I'd guess somewhere around 12 degrees per side, still quite acute. Edge retention is awesome for 1095. I've just put a fresh razor edge on the knife finishing with an Arashiyama 6k stone.

I've owned this one over a year now, and it's seen a fair bit of use but in great condition. Again, exclusively for veg prep in a home kitchen.

Heavily patina'd blade, no reactivity issues. There are some sharpening scuffs, and I did scrub a small rust spot off with a Scotch-Brite pad as evidenced in the photos. All this should patina over with use. Etched "Calton" on one side "1095" on the other.

Super light, fits the hand like a glove, no hotspots, no rough edges. Cocobolo handles are gorgeous, crack and blemish free. Occasionally treated with a light coat of mineral oil.

This one is another laser slicer, performs superb. Takes and holds a fantastic edge with ease. The grinds appear to be slightly asymmetrical. One side I've sharpened at a slightly higher angle, around 15 degrees or so, the sharpened edge is more noticeable as evidenced in the photos. I've just put a fresh razor edge finishing with an Arashiyama 6k stone.

This one comes with a very nice, thick leather pouch sheath from Joe.
