Hi all,
I've got two really nice gyutos up for sale today. They are both in CPM 20CV heat treated to RC61. The handles are absolutely gorgeous K&G stabilized Amboyna Burl from Ben
Greenberg Woods
with African Blackwood ferrules. The balance point of the larger one is midway between the front of the ferrule and back of the logo. The balance point of the smaller one is just in front of the ferrule. These have been ground very thin, down to 0.006" before sharpening so they are going to be great slicers. The 20CV should hold an edge for a very long time.
LARGE GYUTO SPECS:
OAL: 16.0" (410mm)
BLADE: 10.0" (255mm) long, 2.0" (50mm) heel height. It has been hand finished to 600grit. The grind is hybrid full flat/convex which is down to 0.006" before sharpening.
STEEL: 0.098" (2.5mm) CPM 20CV stainless steel heat treated to RC61.
HANDLE: K&G Stabilized Amboyna Burl with African Blackwood ferrule, black and white G10 spacers and black micarta pin.
