Box full of Opinel's

I ordered a box full of various Opinel's in either high carbon or stainless, depending on who is going to be getting it for Christmas this year. I plan on sanding them down and refinishing the wood and want to put a nice edge on them. Only problem I'm seeing so far is that they are all completely flat ground, no edge bevel at all, least not a visible one. Should I put a bevel on these? Maybe convex them? The blades are pretty thin. Never had any experience with Opinel's before. I did get a really nice hook blade for myself that said high carbon on the website. The blade is stamped INOX, which is what all the other stainless blades are stamped :confused:...
 
i think that they make the hook blades in both stainless and carbon, but i could be wrong. they might have just sent the wrong one by mistake...

the blades are very slightly convex ground, i apply a convex edge to them typically. the steel is slightly soft, about even with victorinox in my opinion, so they aren't too hard to sharpen up to razor sharp. a few passes on a 320 grit belt on a bench grinder or by hand i used to set a bevel on a course stone, then go to the fine side of the stone, then polish up to 1200 grit sandpaper for a convex bevel. that flowed into the primary grind.
