Bradford Knives Chef 8" ?

Hey,

I am looking for a new quality 5" to 8" chef knife and came across Bradford knives. Anyone has one that can comment on it? I can't seem to find much about it, even on the Bradford website.

Bradford knives mostly makes EDC, bushcraft, outdoors, etc., knives. I don't know if he makes chef knives.

Seems like a lot of money for a kitchen knife. He makes nice knives though and M390 is no joke. I'm sure it would be a wonderful knife. If money were no objection I'd pick one up.

I own one of his 6 inch outdoors knives. They are good quality. But it is made of CPM 3v, not very ideal for the kitchen. Maybe one of his M390 blades would be suitable for kitchen use.

I emailed customer service and asked about the information, got an email back from Brad.

Excellent questions, we should probably get that info up on the new site.
8 inch Chef is 12.5" OAL, 7.5" Blade
Blade thickness is .130 w/ distal taper
10 chef is 14" OAL, 9" Blade
Blade thickness is .130 with even more significant distal taper.
Both cut amazingly well, the M390 holds a keen edge.

Looks like CF but it would be nice to know from Brad. I have a G3 that I will never part with. His quality is top notch.

You are correct-

Handle material is a special aerospace grade carbon fiber, not customize-able.

I am seriously thinking about picking up this Chef Knife... I love M390 and I can't find a chef knife that seems as robust as this. I just wish the handle was micarta and the price is a bit up there. Sounds like I can get a custom kitchen knife for a similar price.
