Bubble Jig angle progression (FFG)?

I've used the bubble jig to grind two knives thus far, and I don't think I fully understand the intended wedge/angle progression. I start by setting the bevel using a 10 degree wedge, grinding all the way to my scribe marks on both sides, and then I switching to the 5 degree for the remainder of the bevel (FFG).

I felt like I was having difficulty running the grind up to the spine, I chalked that up to inexperience and not really knowing the correct technique for adjusting pressure. Still working on that part, but I re-watched @Fred.Rowe's instructional, and he mentions that he steps down in angle as he runs the grind up towards the spine.

What angle progression should I be following if I'm grinding a FFG blade that's 1" wide for example? When should I switch angles?

Also interested in hearing how you guys use the bubble jig if it differs from Fred as well.
 
I start with 5 degrees, grind to my scribe lines then start walking it up.
It depends on the knife, but if its 1" wide stock, I'd probably use the 3.5 degree block next.
Once I figure out the final degree block for a particular knife, I write it down on the template.
