Smelt. Hmmm...never had it, or smelt it (ha ha crack myself up!!!)...but I have smelt bolters, blades, and sheaths thanks to you clowns here.
 
They are excellent! Especially freshly netted ones! Years ago used to go net them in Lake michigan, havent gone in probably 25 years though...

...Oak Creek, Wisconsin is right on Lake Michigan...Each spring from about 1974 to 1990 I used to go the lake front and set up a couple of 16 foot square nets on winches. Some nights one drop and pull of the net would yield some 40 pounds of smelt...other nights would find us gettin' more malt liquor to get us through the unproductive night. It was always "tradition" for the guys who were there for the first time to bite the head off of the first smelt netted...:eek: ...:barf: ...LOL...It was hard to get someone to tag along for this first time. We'd actually fry 'em up right there when we caught 'em too...It was great fun back then...One of the guys always carried a small folder to cut the bellies and strip out the innards with his finger or a tooth brush...the heads or "innards" never came out or off for some of the "hardcore" smelters...I'm visualizing that knife right now and it seems it might have been one of the 300 series Bucks...He had it for years...

I've had them both breaded and "au natural"; I prefer them just popped right in the oil/skillet. I don't recall what I used for a knife, except that it is always dull...purposely, since you can go right in the bellyline and scoop the guts out...for some odd reason, they always come apart easily along the bellyline... :confused:

Leave the backbone in until done, then spread them open, rip the backbone out, and eat them down to the tail (leave it on!)...no scaling necessary... :)

...I'm hungry... :p

You guys need to drop by and we'll fire up the barbie with some elk, and if we're gonna serve water type a critters with it I think mine would be shrimp.
But then I have never had smelt. Who knows it just might be better.
Gutted the elk with a 110 so does that count as a Buck recipe?
 
No wonder the price up bait has gone up around here. You guys are eating it all. :D
 
In San Diego we would catch smelt and use them for bait. They worked very good for halibut!!! Never thought of eating the little guys but if we did feel the need, there was always grunion hunting.
In all my years down there, I never went. Mostly because grunion ran the beaches usually after midnight. Those beaches can be a scary place after dark! But for those brave souls that tried it, you could pick up bucket loads of the small fish with your hands as they tried to spawn in the sand.

I guess things have really changed since I left there. I remember walking with my girl under the Mission beach Pier in the middle of the night, or at New Port or Laguna all hours of the night, or weenie bakes at the fire rings at Huntington Beach. I hear there are even curfews at some beaches now days from crime or gang activity. Never have been sorry I moved, but watching the Rose Bowl with guys in short sleeves and it's freezeass here makes ya think, but not too hard :). It's been over 25 years now since I moved up here, and I will never go back there to live. Buck had the right idea IMO when they came here to Idaho.
