Buck Cutlery Owners?

Hi,

I'm in the market for some new kitchen knives and doing some research. I'm looking at some of the more traditional cutlery knife brands and I noticed that Buck offers some kitchen knives. I'm familiar with the BOS 420HC blade material from several Buck knives I currently own and see that the Buck cutlery has the same.

I was wondering if anyone here owns any of these knives and how they have performed. Perhaps you have owned these as well as some of the other, more popular, knife brands. If so, how have they performed in comparison?

I'm looking at either the 4-peice or 7-eice Buck sets.

I bought a large block set for my son and daughter in law. They have had them for several years and they are holding up great, meeting their cutting needs and not showing any corrosion or patina.

All in all, made in USA, great warranty and they are fine quality - not a Shun level for a chef, but more than fine for the rest of us, and of course it's a great Buck product.

Don't have a new set, yet but I do have an Empress Trio and just got the old 4 piece steak knife set and those are superb. IIRC my Empress Trio set with burgundy micarta scales is 440c. Love'em and you can probably find a useable set for less than the new ones.

Just a thought. I'd still like a full set of the new ones in elk.
 
Wasp, the 6 piece has all the knives with the fork and spreader. Which may still be sold. The 12 piece contains 6 serrated 5" steak
knives as well. A handsome set. Which is the one I got my wife. Understand these are not made and sitting on a shelf. Buck makes these on a per order basis. You should call or email Buck Knives and get a quote, (price, features, and date they could be shipped). They were offered in green & red paperstone and stag handles. These are well made knives and will last a lifetime.
This is for the model 931 set. DM
 
The model Badhammer was talking about above ^ is model 200, the Empress Trio set. This is a set of 3 knives first offered in 1972
and since discontinued. But can still be found at shows and on the Bay. Also, a very fine kitchen set. Couple these with the model 206 Windsor steak knives (6 serrated knives) set and you'll have plenty of knives. All will have micarta handles and 440C blades.

David, my steak knife set has four partially serrated knives, BUCK in old English over USA, wood scales and the burgundy velour/felt covered case with cardboard outer sleeve. Would they be a 204 Windsor? As you can see the case doesn't have the blue Royalty lining like the 206 sets do. Haven't found anything on the set I have.

got the wife a set. finally convinced her to get rid of her department store retail type brands sets she had before we met and married many years ago.......dang it's been a very long time I've been married:)............anyways her letting me donate those old sets to a needier family was a huge accomplishment and speaks volumes to the buck cutlery quality and abilities.

the steel on many of those entry level retail type brand sets isnt heat treated well and they tend to use a bit more corrosion resistant steel than bucks 420hc and gear their heat treatment for more towards corrosion resistance over edge holding. course every brand is different a bit. my blanket statement cant be applied to every retail type brand.

so far I've found wash after use and dry and while the 420hc is decently stain resistant.......if you dont they will stain more than those type retail brands I mentioned.

I got her the paperstone ones so they could be dishwasher used, but I end up hand washing anyways so in hindsight the stag would have been fine, but the higher cost didnt appeal to me so.......a non issue for me.
 
Bad, that set appeared in Buck's catalog from 1990-93. Notice they have no stainless guard, they have birch handles and should have a 2 line stamp with no date code. I'm looking for the model number. DM

Thank you David. Used one last night for the first time and worked great. I'm on the lookout now for a 206 Royalty set!

I was telling my wife about the different options I was considering, along with the Buck set. She liked the looks of the Buck set and said that we should probably go with those. About 10 minutes later she thought about something. You see, she went to a technical high school back in the early 90's for culinary arts. After high school, she did a semester at Johnson & Wales.

She said.."You know something... I wonder if I still have my knives from back then" she went into the basement and started going through some bins that were buried under all kinds of stuff and came upstairs with a hard case with the Johnson&Wales logo on the front. Sure enough, inside were some knives. They are labeled F.Dick "high carbon" made in Germany. There are still razor sharp. I'll have to do some research on these knives.. but that may have taken care of our knife issue without having to spend any money!

f dick made and still makes good cutting tools. you could have done far worse.
 
Buck kitchen knives are great quality,good performers.
I think we got the 7 PC set which has the spreader,couple smaller paring knives,larger butcher knife,serrated bread slicer.
Wife really likes me too.
 
Another update.

Since my wife found the Johnson & Wasle knife set, she decided to see if she could find here high school culinary arts knives. After much searching, she came upstairs with a fabric knife roll from high school. In side was a full set of Victorinox knives! So now I have a bunch of F. Dick and Victorinox knives! Saved me some money there! I think I'll have to find a knife block, or make one, to hopuse all of these knives. heh....
