If you *really* want the skinny on a good knife for your $600, don't ask us. Ask someone who deals in this for a living. Any good dealer should have handled a multitude of these fine maker's works, and should be able to assess YOUR exact needs with a suitable knife.
Not that the members aren't correct in their offerings, but there is always a personal bias.
There have been NO bad knives mentioned. But to cull these out is something that, possibly, only you and a good dealer can really sort out. Most would even let you exchange it if you were somehow unhappy. Plus you build a good relationship.
I'm surprised this hasn't been mentioned so far.
Now ask who's a good dealer....
