I went to a great Japanese place for dinner last night and I must have had 10 ounces of cold Saki; I even started craving an “AK-47”. I was doing hang over recovery most of today. :o

You must not spoil a whiky like the Macallan by pouring it over ice ... this definitely ruins its flavour and your tongue will be numb because of the ice.

You could dilute your whisky with lukewarm water, by this you even enhance your sens of taste and you will detect many more nuances because the effect of the alcohol will be softened ...

You are mistaken about that. Ice improves the flavor and definitely does not numb my tongue. A little ice just doesn't get the booze that cold.

YMMV, of course.

John the Texan, you are absolutly correct about a bit of ice with The McCallans. The ice (or splash of water) will release any "locked-up" flavours in the scotch. Single batch bourbons are very similar that they need a little help to unlock the full flavour.
 
Won't be tonight boys. . . We did get the handle material in and it looks flugin' awesome. . . but the cart will not be finished tonight. . .
