Bustin' Out The Potjie

This recent thread on A Good Camp Kettle got me itchin to do some cooking out side. However, we had plans to stay home this weekend so I figured I would bust out the Potjie in the backyard.

I wanted to try something different, so I did some googling and came up with a recipe for Chicken in Cream Sauce over at Funky Munky. It looks like this:

CHICKEN IN CREAM SAUCE POT

6 Chicken Breasts
Chicken Spice to Taste
250g Rindless Bacon, Cubed
4 Medium Onions, Diced
60ml Smooth Apricot Jam
100ml Water
15ml Worcestershire Sauce
12 Baby Onions, Peeled
10 Baby Potatoes, Peeled
750ml Frozen Mixed Vegetables
300g Mushrooms, Sliced
Aromat to Taste
500ml Fresh Cream or 250ml Cream + 250ml Milk
1 Pkt Oxtail Soup
1 Pkt Onion Soup

Spice the chicken with the chicken spices
Heat the oil in a large pot and fry the bacon for about 5 minutes
Add the onions and apricot jam, and cook until soft
Add the chicken, worcestershire sauce and water, cover and allow to simmer for 15 minutes
Add the baby onions and baby potatoes, and simmer for 10 minutes
Add the vegies and mushrooms
Sprinkle with aromat, cover, and allow to simmer for 30 minutes
Mix the soup powder with the cream, and add to the pot
Cover and simmer gently for 30 minutes

It was a lot of flavors I wouldn't normally mix together, but it came out excellent! Sometimes you don't have to get away to get away :D

I just ate dinner, but seeing those photos makes me hungry again! I'll have to write the recipe down for future use. Thanks for a great post!
 
Mmm. Makes me hungry, but I can't eat at the moment :( (I am sick..)

Oh yeah.....forgot to mention, our family of 4 (the 5th one is not eating real food yet :) ) didn't even make a dent in the amount of food. Lots of leftovers for lunch, and we froze the rest.
 
That is exactly what I had in mind when I started that other thread:thumbup: Thanks for posting this, I love threads that make me hungry:D.
 
I love meals that are cooked in one pot, and when done outside, always seems to taste better.

Excellent pictures you have taken. Maybe you should write a wilderness cookbook.
 
Brian, What do you use to measure your metric ingredients? A graduated cylinder or...?
 
It never dawned on me to bring cast iron until I met Brian at the Mich gathering last Jan. We have a bunch of cast pans and pots we've used at home but never outdoors. They so work great. I love how Brian uses the charcoal briquettes to moderate heat around the bottom and on the lid - great idea!

Awesome... I showed this thread to my amazing wife who said that she will make it for supper tonight with biscuits.. I'll report back.
 
Tryin to get me hungry again eh.

But more seriously whaere in the US can I pick up one of those kettles?
