Butcher brother's birthday

It's already time for me to start thinking about getting another gift, that is, for my brother's 20th birthday. He's a butcher, and I'm looking for a folder that kind of matches a butcher's lifestyle, a folding knife that you would expect to see a butcher carrying (I know, you're all thinking "A butcher wouldn't carry a folder, they have plenty of fixed blades at their shops.) But he needs a knife to do things that would be ridiculously unnecessary for a fixed blade. What do you guys think?

Now a Northwoods is definately a knife I can see a butcher carrying: especially one with a wharncliffe blade!

I think the ADV would be too gimmicky, imo.
