Hey there everybody! Today I have a new butcher knife ready to go. Designed for a customer who ordered two a few months back and inspired by a classic old one I have. Hope you like it!

Steel is 3/32 thick x 1 1/8” tall in A2 Tool Steel. HT at 60/61. Hand sanded to 600 grit for a satin finish. The edge was around .010” before sharpening and it balances on the bolster.

Dimensions:12 7/8” OAL, Tip to guard is 8”and cutting edge is 7 3/4”.

Stainless steel bolsters and Opal G10 make up the handle, set off with blue and orange G10 liners affixed with brass and mosaic pins. The handle is finished to 1200 grit.

That blade profile looks like it would be great on larger fish too. I may need one of those in my life later this year. Very nice John!
 
Are you fishing for great white sharks?

Pike. 8" blade seems quite small for shark. My current stiff filet knife is 10" but it was a cheapy to get me by. It's just okay. Longer would be nicer for getting out the y-bones. 6" was terrible.

My big pallares fish mongers knife, that might be better for sharks, but that ones was just because I was curious and it does work well for taking down large hunks of meat and fish bought in bulk. Mostly, looked really cool.
 
Oh I hear ya, there's actually pike in Arizona at Upper Lake Mary, Flagstaff's water supply. I saw a guy in a tiny boat pull one out and it just kept coming out and coming out... easily 4 feet maybe more. I've caught quite a few long ago but nothing like that. Best eatin' fish I ever had.
