I'll vote CF (competition finish). It's basically the raw INFI. You do have to keep it lightly oiled, i use a little vegetable oil. If you plan on being in a corrosive environment a lot, then you probably want a coating.
As far as aesthetics go, i've done some copping on fresh and dead wood with my TGLB, and after a quick wipe down and spray and wipe with oil, you can't tell that it's been out of it's pants.
Keep in mind, the CF isn't uniform like satin, so, if it get's some fine scratches (which i really don't see in mine, honestly), it's less noticeable than on a "pretty" finish... so the question is, do you want it to look like it was "new," or to look like it has a pristine finish

CF is rough to begin with.
Since i don't have any satin "user" blades, someone else will have to tell you whether those need the light oiling. Oh, double cut is an option on some knives, it's a double bead blasting, and is supposed to help with corrosion resistance (not that INFI is "prone," but it's not "stainless").
CF is not listed on the site, you have to call or email, and it's usually no extra charge.
I'm not one of the real "experts" here, just a piglet in training, but i know what works for me...
