Cabochon Options after purchase?

I just received my large Mediterranean 21 and I love it. When I ordered it directly from CRK, i asked about having a blue star sapphire installed but they said they couldnt customize the knife as it was a limited model (or something to that effect).

Do I have any options on having this done after the fact? Sure would be cool and keeping with the Mediterranean theme.

Only from 3rd party individuals- I have no idea who would do this- Perhaps a local jeweler?
