In practical terms, lard is like grease and has a slightly unpleasant smell. Suet comes from around the kidneys of a beef animal and, at least in the prepared form in which it is usually offered for sale, is hard, waxy and neutral in taste and smell. It seems to keep forever which makes it useful for use in emergency rations. The neutral taste makes it excellent for sweet puddings.quick question, because i thought they were the same thing -- what's the difference between lard & suet? pork fat vs beef fat? partof the animal it comes from?
