Lumpymike's list of hatchets is a good one. If you are going for a hatchet, people who know axes and hatchet always mention Gransfors. That should tell you something.

That been said, consider taking a hatchet or ax ONLY IF you are experienced in using one. You see, the possible consequences of an ax or hatchet accident are way more severe than a knife or saw accident. I have a Gerber Sport ax, but I rarely use it for camping. Everything I would use a hatchet for on a regular camping trip can be done with a large knife and a baton or with a saw. If you want to take a hatchet use it at home first, under controlled conditions. Get used to its feel and balance, and how to use it effectively.

Second, the hatchet is much heavier that an saw. That can make a diference when you have to carry your equipment on your back or shoulders for a while.

Third, my personal favorite, a saw tends to be an easier to use tool. It does not require much training or getting to know the tool.

A folding saw would be great. The Gerber Exchange-A-Blade is a good choice as is the Sven Saw, or the Sawvivor.

Another alternative would be something in the style of a pocket chainsaw. As the name suggests, these are human powered chainsaws. These tend to be ligther and work faster than regular folding saws. Check the reviews done by Equiped to Survive.
