Can anyone guess what steel fits these certs.... Thanks for the follow ups

Carbon is 0.9 to 1.2 %
MN is .3 to .75
Si .1 to .35
Cr 1.0 to 1.6
 
I am asking because I don't know , I was told en31 which I know nothing about so I am trying to learn
 
Looks credible: EN31 and 52100 are the same steel under different sets of standards; EN31 is a British standard. There are several other designations for it in other countries as well.

The heat treatment is a little more difficult than the simpler 10xx steels due to the chromium. I'm guessing that it will be a little more difficult to cold work than the 10xx steels.
 
Its a little bit more difficult to cold work, but not like a high alloy stainless. 52100 is one of the most versatile knife steels. It has a super fine grain, good toughness and edge holding. The only downside is it will rust. Heat treat requires good knowledge and precise temperature control. Its one of my favorites. If it only would show a nice hamon.
