Or should I just get in there and get my hands dirty and learn from my mistakes :-) (on a cheap knife). Any resources or help would be appreciated!

I currently have a craftsman 2x42 belt sander with a large grit range...

Specifically, how do you regrind a spyderco that has a full flat grind without thinning the spine?

If you want to keep it full flat ground I think you will have to thin the spine a little. You could do something like a scandi grind with out thinning the spine. Why are you regrinding the blade?Make sure not to get the blade to hot.

cuz the shoulders of the edge are way to thick and affect cutting performance... they are about .040" right now on my manix xl. They need to be less than .015" at the minimum (from what I read). I was thinking that I could do something to protect the spine itself but I don't really know what (something to remove the primary grind/face of the blade, but not quite all the way to the spine).

Take the shoulders off with an intermediate grind. I would use a course stone, not the belt grinder.
