You don't :p However, you can get paid to write reviews about knives by getting into journalism, and one day being hired as a writer for a knife magazine, and be paid by them.

If you look at people who are paid to review knives, they all write for or own magazines.

Another route is to start your own publication. Once you've gained enough recognition and reach a big enough audience, some companies will submit products to you for review. The Martialist receives submissions from quite a few major manufacturers who understand the value of an objective, constructive write-up in informing consumers about the product.
