I was kind of surprised they quartered that thing with a knife that size, but then I see they had no problem. I don't recognize the knife, but I would say it is about a 3 1/4" blade.

For me, a 2.5-3" blade is ideal for processing game, including elk. I've watched a lot of people over the years, struggle with their 3.5"+ blades.
 
Gerber makes one too, called the Vital.

I'd field dress an elk with one no problem.
