Can you name a gadget for sharpening knives that REALLY works?

There is no magic bullet. The more you learn about sharpening, the better your results will be no matter what device you use. The lowly carborundum works well as long as you learn to use it.
 
Edge Pro Apex - You don't need anything else. Buy an EPA and a strop and you will have a system you will never have to rethink.

I believe this is an excellent assessment. Its not so much the devise as it is the user of the devise knowing how to use the tool to accomplish the goal.
