Can you Petina a Busse?

I have seen neked Infi discolor slightly with cutting pork etc before.

Yes, for some reason INFI seems more prone to developing a patina from meat, either raw or cooked.

So the obvious thing to do would be to wrap your blade in bacon, or cover it in ground pork! :D

I accidentally acid etched some s30v with battery acid. Experiment at your own risk though. I do know there is 15-20% acid vinegar that might be worth trying. Regular kitchen vinegar is only 3-7% IIRC. Be aware that the stronger vinegar is hazardous to skin and eyes, etc.

Ok, so I can look for some stronger vinegar. Would that be hazardous once the finish is created? Like to the touch? Or for food prep?

Once the patina is done just wash it off and the only thing left is oxidized metal.
No different from any other rust, just this is a highly concentrated form that protects the metal underneath.

Oddly enough, stainless steel actually uses a patina as well, it's just that chromium oxidizes really fast and is still shiny afterward.

I doubt it. Once you have the patina you desire, you could wash it with a bit of water and baking soda to neutralize the acidity. I usually just wash my knives with soap and water after a patina but I've never messed with the strong vinegar either.
