Can you quench a knife (5160) in cooking oil?

Hello everyone I just wanted to find out if you can quench a knife in cooking oil? It's all I have right now.

Canola oil is the only safe cooking oil to quench in.

What do you mean by safe?

Canola oil has a high flash point and works well as a medium speed quench oil.
Other cooking oils are not necessarily as good. I would describe canola as a "reliable" quench oil.
Heat canola to 120-130F and use at least a gallon ( two or more is better).
