Well, if 154cm doesn't micro-fold at barely the slightest use in Maple, then yes I can tell a pretty obvious difference... This is over 15 degrees per side:
Same use or much more on the same branch, but with a much thinner angle, about twelve per side, with good old either D-2 or 440C (looks less used because of the polished Cerakoat coating):
In my experience CPM S30V in a $2000 knife was doing exactly the same thing: I avoid all the CPM steels now. CPM steels are the only steels that are absolute deal breakers for me, at least for heavy chopping knives.
