A Few answers:
1500 total produced in late 2002
750 SE - 600 RH & 150 LH
750 PE - 600 RH & 150 LH
All were VG-10 steel
AFAIK the RH and LH models were just mirror images of each other - no other differences.

Weight, at least by my scale is 118 grams. David already gave the production stats, so here's a photo of one of the LH PE ones, along with a similarly configured Delica and Civilian...
...and another with several other versions of the Police and the Rookie.
Same knife, but the lighting in the second photo makes the POLICE engraving on the blade difficult to see.

Here is a used CF Police after returning from the Spydie Spa for a factory sharpening. (I got it off ebay the edge was pretty beat up.)
