The chef is an older knife,marked LL Bean Freeport ME right on the wood handle. Its forged integral,tapered tang. 14" OAL with 8-1/4" of cutting edge. Quick & light,they don't make 'enm like this any longer,I'd say.Pretty sure it's a Lamson
The other two are Russell Green River blades I put handles on. Test knives. The " Cartouche ( olive wood) is 9" OAL with 5-3/4" of edge,and the parer ( maple) is 7-1/8" with 3-1/8" of cutting edge.
The test was ,repeated useage & washing ,wet,dry,wet dry. They held up fine as I kinda thought. Also,since the paring knife stock is thin,I do the maple a bit thicker. The olivewood Cartouche has a real nice taper on it ,they both are 1095 carbon,factory forged & flat ground
