carbon pattern welded blades in the kitchen

My uncle has a coal forge set up (I can't forge unfortunately, I'm in my garage in the suburbs so no hot work for me other than HT) and I'd like to do some pattern welded steel.

I like to make and give away kitchen knives primarily. How dies the carbon steel pattern hold up in the kitchen? My carbon monosteel knives get a pretty good patina on them in short order.

How does the pattern hold up in the kitchen? Anyone have pics of a carbon damascus blade that has been used for a while?

I was thinking of doing the common 15N20 with 1084/4 stack.

They get a nice patina and if etched fairly deep the pattern is always visible. Works fine in our kitchen.
 
You don't really notice the patina much because you already "patinated" it when you etched it.
 
That makes a lot of sense. Thanks! I thought it was asking for trouble to try stainless pattern welding right off the bat.
