The wood is Camatillo Rose wood. It is a tight grain wood said said to darkens with age. I choose Rosewoods for Chef knives because of they are oilier in nature and repel moisture better.

The Spec's for this one is,
Blade steel 1084 forged to shape with distal taper and full tang.
7 & 7/8" blade length.
13" overall length.
2" Blade height.
.155" max blade thickness.
416 ss Dove tailed bolsters
Camatillo Rosewood
Stainless Corby Screws.

Comes in a zippered Case.
My wife uses the cooking oil PAM after finial washing
then wipes the excess off with a paper towel to prevent rust while the blade patinas.
