Are there any companies that make quality fish fillet/boning knives out of carbon steel(including D2, etc.) Thanks.

Being from FL, just kind of curious what benefits a carbon steel knife may offer for fillets? Hold the edge better?

carbon steels are easier to sharpen but can rust quicker. if you are around salt and humidity (florida is loaded with both) i may would lean towards a stainless steel unless you dont mind oiling your knife up good. your choice.

I just picked up an Alaskan Guide ( Cabelas product) filet knife. I has a red wood handle and a coated S30v steel blade, and has a nice leather sheath. I was on sale...
