U.S. Schrade's 1095. For a good, economical, long-lasting, tough steel that's relatively easy to sharpen, there's nothing better. (My opinion, of course.)
Only true carbon steels I have used have been 1095 by Rowen and GEC, and whatever is in the Opinels 1075 or something? I like 1095 more for edge holding, thought that Opinel practically sharpens itself as it dulls it seems. Dulls quickly but you can just strop it on the cardboard you've been cutting and you'll be okay... lol
as far as "non stainless" tool steels and other alloys: CPM M4 by a mile. Holds an edge way better than even s30v
