In the calatog it says the 700 series pocketknives handles are birchwood. Are they water/damp resistant, impact resistant (if accidentally dropped during typical use), and what, if any, care may be required to prevent possible splitting?

The sides are a wood laminate. You should not have to worry about splitting due to environment due to the resigns in the laminate. Normal care for a wood product shall do you well. No need to keep it waxed or anything.
