With regards to S30V not rusting, I have had this steel rust on me before. It was not in use (temp/humidity controlled basement) and was the only stainless steel knife in that environment that had issues. It was a bead blast finish and other S30V knives had no issues. It was a reminder to me that nothing is truly stainless and I would certainly treat just about any blade I intended to use.
I like the idea of food safe oils, but you have to be careful not use something that will rot (such as vegetable oil). For knives that won't see food (display knives, choppers, etc), Ballistol has provided better protection for me than Ren Wax, Tuff Cloth, and a number of others (thank you Burt Foster). And it can be used to *lightly* coat the inside of a leather sheath to reduce rust issues during carry. The only down side is that I need to recoat every 6 months or after use. This is just a wipe on/wipe off for each knife, so it's not a big deal. For knives I don't use, it would be nice not to have to think about the maintenance.
