Carving the Turkey

Just kidding; I'd be afraid to use this thing to cut newspaper.
I'll just be using my plain old Chicago Cutlery carving knife (haven't received any kitchen cutlery upgrades yet).

Today's turkey carving was done with Buck's early carver. A tradition at our house. DM

No turkey for me this Thanksgiving, but now I'm missing it after looking at your photos. :)
 
Half the bird was done with an electric, decided to try my large Empress to carve for the other half. Kinda enjoyed carving it by hand with the Empress
 
Nice Buck carving knife David! I carved the turkey at my Sister's house using a knife she had in the drawer - nothing classy like your Buck - don't even know the brand name. OH
 
I used a Shun chef s knife to carve our turkey. My daughter and son in law gave it to me last Christmas and I use it only once and a while. Here it is pictured with the other knife I got for Christmas. I like that knife. Happy holidays.

Steve, did you have Thanksgiving dinner at both your folks and her's? How did your 119 work? I have used my 120 back in the early 90's a time or so and it worked fine. Which
I was surprised as usually the thicker blades don't do as nice a job. I recall having Thanksgiving dinner at my Mother in Law's and they Never had a sharp knife to carve the bird. So, I started bringing one suitable plus my stone. So, while the girls were preparing the meal I rotated her knives in for a sharpening session. The Colonel would then walk by and check the edges on these and promptly pull out his pocket knife and leave it for me to sharpen. Then turn and go back to what he was doing, all in his proper protocol. DM

David, we always have a blast and every family brings food with them. We had about 13 folks a dinner; my job this year was the ham and the corn casserole. My sister backed me a pecan pie to bring home too! She is the best little sister you could hope to have. OH
 
We're having our family Thanksgiving today. Used my 541 Open Season Boning Knife to break down the turkey. I'll use my Empress Trio slicer to carve the breast sections at the table.

Your boning knife looks nice resting on -- is that a dyed lizard skin? The Empress Trio set is handsome too. How did they work? Thanks for the photos. DM

I think it's just an embossed pattern on regular leather. The large ET slicer worked like a charm on the breast portions. I've been thinking about sending my set back to Buck for a spa treatment. Think I'll wait til after Christmas when I won't be using it for a couple months.

I used a few knives to bone a turkey, which was then rolled and roasted. The Buck 119 did a lot of the work. The small santoku is a cheap Kitchen Aid, it gets really sharp but today it gave up about 1/2 way through and the 119 took over. The 119 was also perfect for reaching in and severing the leg and wing joints. The legs and wings get the bones removed from the inside.
