I know the electric is supposed to be awesome, but the Empress has a fresh grind on it ad this turkey was the first thing it ever cut, so it it was like butter. And I think much more control than an electric.
Google "Scott Rea" "Boning and Rolling a Turkey" and you will find a YouTube video that will walk you through the process. All you guys (and gals) who have too many knives out to try it.
