Does this product/process have any role in knife making?

It has very little use for knives and for a blade very difficult to control the depth of diffusion.

Primarily used for a low carbon steel, to give it a tough/hard outer skin.

I have hardened low carbon 1018 guards and spacers so they wouldnt scratch so easy. I experienced pitting in some areas so I dont mess with it anymore. It only hardens about .003-.004" deep and can only be hand sanded afterward. Grinding would take the hard shell off in seconds. It has uses in gun making for hammers and triggers contact areas. Also gears, pins and shafts. Not much of that in knives.
