I have heard that ceramic blades are incredibly sharp and very durable as well. Does anyone have any experience with them? Do they hold an edge well? Hard to sharpen? A maintenence nightmare?
They don't offer any advantage to steel in terms of initial sharpness and the durability is actually really low. They will stay sharp for very long if they are not fractured. They can be sharpened on most abrasives however the grindability is very low compared to steels. They make S30V look like 420J2 in that regard.
Yes you can use them to cut most materials, just avoid torques and dynamic impacts on hard materials like metals, bone, and rock. There are also various types. McClung uses a ceramic composite which even handles light chopping on woods, the blades are fairly small and designed with self-defence in mind.
