Cheap kitchen knife for bushcraft?

Modern kitchen knives tend to be to thin with to fine of an angle for use in the field. The blades will chip out with hard use.
Old hickory Is an exception to this and they make fine field knives.
 
opinel make a hi carbon paring knife , as well as old hickory

its my experience that a stainless kitchen blade edge will roll the edge before chipping . stainless pocket knives or hunting / field knives tho seem to be made more brittle and chip out before rolling . This is just my experience with cheap chinese mystery metal tho your mileage may well vary .

The majority of stuff I use a small knife for when we are out bush is food related , cutting food , cleaning fish , butchering small game , some carving sticks for tool making as skewers or stuff , it just as readily do it with a paring knife I got from the 2nd hand shop as my hundred dollar bushcrafter ( got a couple now too :P )

use the tool within its limits , and its no problem .
