OK. First. Thanks guys. I make these for this very crowd! So its great hearing you like em!

Now. I use wipe on polyurethane on my knives nowadays. I had been using a Danish Oil finish. But I found that it was too much maintenance to keep the wood properly protected. And also that it allowed the Osage to oxidize (brown out) too quickly. I wipe on polyurethane, then wipe it all the way off. After it dries, I give it a little scotchbrite and repeat. That seals it up a bit better, yet doesn't look all shiney!
