Cheese in a Can

Read a good review of Cougar Gold cheese put out by Washington State University in Saveur, a hoity-toity cooking mag. It's pretty much cheese in a can. Supposedly has a pretty good shelf life.

I've gone through a good number of these, and went to the school where they're made. Since the cans are kept refrigerated up until purchase, my first thought was that what you say is not true, that they won't remain edible without refrigeration. However, according to this, you might be right. This says that the quality will diminish (without refer) but the cheese remains edible.

pretty darn expensive. Might not need refrigeration, but judging by the shipping info, it can't handle even mild heat.
