I made this chef knife from .11 inch thick, 2 inch wide CPM S90V and hardened it to 60 Rc. The blade is full-high flat ground and is 8.25 inches long with an overall length of 13.5 inches. I live in Sonoma County, California's Wine country and have access to a vineyards Zinfandel grape wood pruned off by the worker. The cut offs are small but gnarly with good figure. I stabilize them and then cast them in different colors of polyurethane, this handle is brown and yellow and I call the finished result Winewood. The Saya scabbard is made from Koa wood from the Big Island of Hawaii.
